Mezcal
A richly complex spirit beloved in Southern Mexico, Mezcal can be made from dozens of agave varietals, each of which offers unique flavors— from full-bodied Espadin, to earthy, fruity Tobalá, to spicy Tepeztate.
While the Tequila industry has grown precipitously, Mezcal remains an artisanal spirit— Mashed under handmade stone grinding wheels and cooked in earthen pits over firewood. Many fine mezcals must be wild-harvested, because the agave species that produce them require natural pollination and cannot be cultivated. Every bottle of Mezcal tells its own story.
